As I round my last post for the day I want you all to know I don't know if I will ever be able to make this the same again. I threw some ingredients together and it turned out really really freaking well. But I am going to try just for you, my lovely reader.
Lemon Basil Garlic Chicken
1-2 boneless chicken breasts
~1Tbsp olive oil
~1 1/2 Tbsp lemon juice
~2 tsp basil
~1 Tbsp garlic (diced)
Pepper to taste
Preheat your oven to 375. Mix all ingredients in a gallon sized bag and let sit for ~15 minutes (ideally this should sit for an hour or two in the fridge, but I was hungry and couldn't wait). Put a little bit of extra olive oil in the bottom of your glass pan and spread out oil so that it coats the bottom evenly. Place chicken in the pan and cook for ~30 minutes. My lovely roomies Sam and Cristina loved this recipe. I have to admit though, I didn't really measure my amounts; I just gauged by sight. Mine did turn out a little more lemon-y than I normally like, but I have a feeling I put more in than I stated here. You can always add more if you feel there is not enough liquid in your marinade.I also added more garlic than what I wrote, but my mom always complains I put more garlic in food than I should so I put a "normal" amount in my recipe. I heated up some leftover mashed potatoes and cooked some green beans really quick and there was my dinner!
