So I am really bad at updating....

I would like to apologize. My roommate reminded me that I it has been awhile since my last blog.  The last couple of weeks have been kind of crazy and the meals have tended to be quick, painless, and relatively unsatisfying. I have, however, cooked the last two nights and would like to share those recipes with you.

Italian Pot Roast
2 lb pork roast (I use pork instead of beef because I personally prefer the taste of pork)
3 Tbsp Italian seasoning
1/4 cup Italian dressing
1 Tbsp (ish) minced garlic (I like more)
Dash celery salt
1 medium sized onion
baby carrots (8 oz bag)
baby potatoes (5-6)
2 cups water

Put your pork roast in a gallon zip lock bag. Add Italian seasoning, dressing, garlic, and celery salt. Close the bag and mix so that the roast is completely covered. Chop your onion into bite sized pieces (I prefer this over diced or even smaller). Rings would also be acceptable. Put half of your pieces in the bottom of your crock pot. Lay roast over your onions. Dice (or cut in half depending on the size) your potatoes and lay around your roast. Put carrots around roast as well. You can use as many carrots and potatoes as you like; I just happen to like a lot of them. Add the rest of your onions to the top, including laying them over your roast. Pour in water. Cover crock pot and set on low for 8+ hours. Come home and voila! Dinner!


I have a night class on Tuesday nights and this was something super easy for me to throw in the crock pot in the morning to have when I came home from school. If you don't have all the seasonings, or don't want to buy them, you can easily get a pot roast mix from your grocery store. This is the first time I have tried this recipe and I liked it a lot!

Normally I would wash some spinach and throw a small salad together, but I was super hungry and feeling kind of lazy. Meh, c'est la vie.
