This is the time of the semester where I start to stress terribly about my last couple of weeks. When I actually stop to think about it, the things I need to do are not too horrible, but they pile up and worry me more than they should. Seeing as I am feeling stressed you would think that I would be working on my papers, but a contributing factor to my stress is that instead of actually working and lowering my workload, I tend to procrastinate until I feel super pressured to get done. Blegh. I have even procrastinated on writing this. I started writing this about 25 minutes ago and keep finding other things to do on the internets. I really need to figure out how to get myself in gear. I have tried giving myself little rewards but that doesn't even help. I make lists, but those just give me anxiety. So internet world, what should I do?

So I am really bad at updating....
I would like to apologize. My roommate reminded me that I it has been awhile since my last blog. The last couple of weeks have been kind of crazy and the meals have tended to be quick, painless, and relatively unsatisfying. I have, however, cooked the last two nights and would like to share those recipes with you.
Italian Pot Roast
2 lb pork roast (I use pork instead of beef because I personally prefer the taste of pork)
3 Tbsp Italian seasoning
1/4 cup Italian dressing
1 Tbsp (ish) minced garlic (I like more)
Dash celery salt
1 medium sized onion
baby carrots (8 oz bag)
baby potatoes (5-6)
2 cups water
Put your pork roast in a gallon zip lock bag. Add Italian seasoning, dressing, garlic, and celery salt. Close the bag and mix so that the roast is completely covered. Chop your onion into bite sized pieces (I prefer this over diced or even smaller). Rings would also be acceptable. Put half of your pieces in the bottom of your crock pot. Lay roast over your onions. Dice (or cut in half depending on the size) your potatoes and lay around your roast. Put carrots around roast as well. You can use as many carrots and potatoes as you like; I just happen to like a lot of them. Add the rest of your onions to the top, including laying them over your roast. Pour in water. Cover crock pot and set on low for 8+ hours. Come home and voila! Dinner!
I have a night class on Tuesday nights and this was something super easy for me to throw in the crock pot in the morning to have when I came home from school. If you don't have all the seasonings, or don't want to buy them, you can easily get a pot roast mix from your grocery store. This is the first time I have tried this recipe and I liked it a lot!
Normally I would wash some spinach and throw a small salad together, but I was super hungry and feeling kind of lazy. Meh, c'est la vie.

Triple Play Part 3!!!
As I round my last post for the day I want you all to know I don't know if I will ever be able to make this the same again. I threw some ingredients together and it turned out really really freaking well. But I am going to try just for you, my lovely reader.
Lemon Basil Garlic Chicken
1-2 boneless chicken breasts
~1Tbsp olive oil
~1 1/2 Tbsp lemon juice
~2 tsp basil
~1 Tbsp garlic (diced)
Pepper to taste
Preheat your oven to 375. Mix all ingredients in a gallon sized bag and let sit for ~15 minutes (ideally this should sit for an hour or two in the fridge, but I was hungry and couldn't wait). Put a little bit of extra olive oil in the bottom of your glass pan and spread out oil so that it coats the bottom evenly. Place chicken in the pan and cook for ~30 minutes. My lovely roomies Sam and Cristina loved this recipe. I have to admit though, I didn't really measure my amounts; I just gauged by sight. Mine did turn out a little more lemon-y than I normally like, but I have a feeling I put more in than I stated here. You can always add more if you feel there is not enough liquid in your marinade.I also added more garlic than what I wrote, but my mom always complains I put more garlic in food than I should so I put a "normal" amount in my recipe. I heated up some leftover mashed potatoes and cooked some green beans really quick and there was my dinner!

Pepperoni poppers
So my roommate Sam and I were procrastinating on Pinterest one day and found this recipe for pizza rolls. We changed the recipe a little (because what fun is following the specific recipe) and have since renamed them Pepperoni Poppers!
Pepperoni Poppers
Serves 4
3 cans Pillsbury butter biscuits (or since you are a broke college student, the generic ones)
1 block colby jack cheese
1 package of pepperoni (the big one, not the 50 piece one)
1 egg
Garlic salt
Italian seasoning
Parmesan cheese
Sauce (pizza or spaghetti)
Set your oven to 425 degrees and pull out a 9x13 glass pan. Spray the bottom and sides with whatever you use (Pam, generic, etc). Cut the cheese (heh) into about 30 pieces, give or take. Don't worry about making them super perfect, no one will be seeing them. Open your biscuits and flatten each one a little so that they will be easy to create a pocket. Place a piece of pepperoni, a piece of cheese, and another piece of pepperoni so that they are a mini sandwich into the center of the biscuit. Fold your biscuit so that you cannot see any of the insides and place folded side down into the pan. Repeat until the pan is full. Beat 1 egg and spread evenly over all the pieces. Sprinkle garlic salt, italian seasoning, and parmesan cheese over the top so that they are evenly spread (Sam and I like a lot of garlic, so we kind of put a lot of garlic on ours).
Pop them into the oven for 18-20 minutes and there you are! Serve with a cup of sauce if you would prefer!

1 can red kidney beans
1 package of Kroger's Chili mix
1 tsp- 1Tbsp Chili powder (depending on how hot you like it)
1/2 can re-fried beans
Mexican (or any other kind) of shredded cheese
Brown your meat in a pan and drain the fat. Put all the ingredients in a stove top pot, stir, and put on medium heat until the chili starts to bubble. Put on low heat and stir occasionally. Serve when ready. I like to sprinkle a little bit of cheese on top of the chili, but of course this is not absolutely necessary.
**This was the first time I actually cooked chili on a stove top instead of a crockpot. If you are planning on coming home late and don't want to have to worry about cooking, brown and drain the meat the night before and put all the ingredients together in the crockpot the following morning. Set on low and when you get home, BOOM dinner.

Goals
As I round to my final year of grad school, I can't help but begin to think of my goals for the next few years. I tend to make goals in 1, 5, and 10 year increments so that I don't overwhelm myself, but to also give myself a timeline to set in order to know where I stand and what I am going to do to get to where I want to be in my life. So I thought I would share some with you all:
1 year:
I hope to have most of these goals (if not all of them) accomplished in the next 10 years, but life always manages to do what it wants. C'est la vie.
On a random sidenote, I finally bit the bullet and dyed my hair red! I love it, but I won't be posting a picture until I get one that I really like. :o

For my seester
So my sister pointed out to me this morning that she has been waiting for more posts on my blog and while she enjoys my food posts, she also would like to see more fashion posts. So this post is fashion. :)
Today I managed to look super cute for teaching. I have started branching out in my accessories again and remember how much I love them!
I do not normally wear black and white without other colors, but today felt like an okay black and white day. I really enjoy being a girl, high heels and all. I recently discovered in my closet that I really like prints. Hence the skirt. What is nice is that the skirt is long enough that I don't have to worry about the wind too much (which is not normally a concern but the material is SUPER light and on windy days, that can be an issue).
Today's outfit:
Skirt and shoes: Fashion Bug
Top: Either Walmart or Target, I forget which one.
Necklace: Isa's garage sale!
Headband (white): Walmart (I don't think you can really see it here)
Since the outfit was so black and white I decided to keep my makeup natural as well. Just a little base, blush, mascara, and lip gloss and I was on my way today.
I suppose that is all for now. I made chili last week and will be posting my recipe sometime later this week.

Fruit Salsa Yumminess
Why hello all! I have decided to finally share my super awesome fruit salsa recipe for you. I make everything from scratch including the chips. This is a super crowd pleaser for any summer event. I realize that summer is almost over, but this is the first opportunity I have had to make it all summer, so please, bear with me.
Fruit Salsa:
3 Tbsp brown sugar
3 Tbsp apple jelly
1 small container of strawberries
1 medium sized Red Delicious apple
3-4 Kiwi (3 medium sized kiwi, 4 small)
2 cans of crushed pineapple (preferably in fruit juice but syrup is fine)
Large mixing bowl
Large spoon
Pull out a large mixing bowl and add brown sugar and jelly. Make sure to mix the two until it is paste-like and there are no chunks of brown sugar left. Strain the crushed pineapple and add it to the bowl (I find it easier to strain one can at a time, otherwise the juice takes forever to strain. Clean and cut the strawberries into quarters or a little smaller (if they are larger strawberries) I like to make them about half the length of my thumb. Add them to your bowl. Then skin and cut the kiwi into bite-sized pieces, adding them to the bowl. Finally, rinse and cut your apple into bite sized pieces. Add these to the bowl. Mix with a large spoon, making sure all of the ingredients are fully mixed. You may see some of the juice from the crushed strawberries start to reappear and that is fine. Make sure you get all the way to the bottom where the brown sugar/jelly mix has been sitting. Cover and place in fridge until ready to serve.
Homemade chips:
2 packages of FLOUR tortillas (taco sized or burrito, depending on how many chips you want)
Butter, melted
Container mixed with cinnamon and sugar**
Pizza cutter
Cookie sheets
**I like to mix these with more cinnamon than sugar, but you can create yours to taste. I went out and bought 50 cent salt and pepper shakers and mixed cinnamon and sugar in them until I liked the color.**
Preheat your oven to 375 degrees. Place 1-2 tortillas on a sheet. Bring your melted butter to the tray and with a spoon, put 1-2 spoonfuls on the tortilla. Using the spoon, make sure the butter reaches all the way to the edges of the tortilla. Add another spoonful if necessary but they should be just lightly buttered, not drenched. Using your shakers, shake cinnamon and sugar mix over the tortillas, coating them lightly. Using your pizza cutter, cut the tortillas into 6. (12 if using the burrito sized shells). Place in the oven on cookie sheet for 7-10 minutes (depending on your desired level of crispiness). Leave to cool then place in a gallon sized bag.
The ships take about an hour to fully do as I would not advise placing more than one cookie sheet in the oven at a time. This is the most time consuming part of making the fruit salsa, but it can be really enjoyable if you want to get the kids to help or if you have a friend that you can exploit like I did. :)

My Bucket List-- Updated
I've been thinking lately about what I want to do with my life after graduation. Now I know it is still about 10 months away, but I know it is going to come faster than I can imagine. And it got me thinking about my old bucket list. So I pulled it out from 2008 to see how far I've come.
Original Post (and updated with annotations)
So I saw the movie "Bucket List" today and it made me think about things that I want to do in my life before I too "kick the bucket." I might add onto this later and cross things off as they happen, but I at least wanted them to be listed somewhere.
1. Make a difference in someone's life
Ironically enough, someone dear to me informed me I could cross this off my list the day I posted it. I'm glad I can make a difference, no matter how small.
2. Visit every Latin American country and have one picture that reminds me of where I've been

I would like to say I am a fairly impulsive person in general. I think I meant I wanted to be impulsive about something big. Which has yet to happen.

Adventures in Cooking
So this morning I started my crockpot up and put in some frozen chicken tenderloin (I apparently bought the tenderloin instead of breasts) and about a half a bottle of Italian dressing. Top it off with a little bit of water and voila! Easy dinner! This was my first time trying this, since normally I marinate the chicken and bake it. This is much nicer in the summer; especially since I do not have a grill. I cooked the chicken on low for about 10 hours. I honestly would have only cooked it for 6, but our power went out. I wanted to make sure that the chicken was fully cooked before eating it. Fast forward to about 9:30 tonight when I got home, and the chicken was fall off the fork tender. YUMYUMYUM SO GOOD. Since it was 9:30, I did not want to make a whole meal so I whipped up some bag potatoes (seen below). These are AWESOME and you can buy them at the WalMart for like 98 cents. They are perfect when you do not really have time to peel, boil, and mash your own potatoes.

The plate looks super puny but that is because this was mostly a snacky dinner. I really wanted to make green beans, but laziness and the long day prevailed. The amount of chicken I made would feed four, but I would suggest making a double batch of the potatoes if you are planning on having that many people as people are always willing to eat more potatoes. :D
Total cost for the meal: $5.00 for chicken, $1.50 for dressing (generic), $0.98 for potatoes, and if you buy frozen green beans (which is what we had in the house since WalMart was out of fresh) for $0.98. Less than $10 total for a meal for four. And it was super yummy as well.

Happy Birthday to Me!
So I was out and about with my roomie Sam today and we managed to make our way to Target. Every time I go to Target, I have to look at the shoes. EVERY TIME. It is kind of awful actually. ANYWAY, the shoes that I love to try on but can never buy happened to be fifty percent off. FIFTY. I was super excited and put them on again today. Of course, you cannot buy new shoes without trying on a cute outfit that would go perfectly with it.
So Sam convinces me to try on this outfit. I'm in love. I decided to go ahead and buy it for myself for my birthday, since it is on Thursday and of course I need a new outfit for my birthday. Woot! Below is my super cute new outfit! And yes, now I finally have leopard print pumps.

So believe it or not, I am finally starting this blog. The majority of postings will manage to be about the food I cook and random things that pop into my head. Today is the latter of the two.
I find myself laying around doing absolutely nothing productive and asked myself "what should I do to help pass the time this summer?" I came up with this. Many of my friends have told me this should have been started awhile ago.
I will tell you this: my recipes are based on my budget as a broke graduate student (which, oddly enough, the blogspot ID was already taken, so here is your plug brokegradstudent.blogspot.com).
So.... yeah. OH! I made these for a work function a couple weeks ago:
Oreo Cheesecake Cupcakes
Serves 12
Ingredients:
1 box No Bake Cheesecake Mix (ironically the Kroger brand comes out tasting best)
Milk
One package of Oreos
Cupcake holders
Instructions:
1. Prepare No Bake Cheesecake Mix per instructions on box (all you will need is the milk and the mix)
2. Place cupcake holders into your cupcake tray.
3. Place 1 (one) Oreo at the bottom of each cup.
**Bonus: You don't have to do this but I also crush up more Oreos and put them around the Oreo so there is more of a crust**
4. Crush up 4-5 Oreos and fold them into the cheesecake mix. Do not make the pieces super small or giant chunks, but a happy medium.
5. Fill cupcake tins. There will be enough cheesecake mix for exactly 12 cupcakes.
6. Crush more Oreos and put them on top.
7. Stick the tray in the fridge for 4-24 hours and serve cold.
I never make just one batch and my double batch went pretty quick at work, so be prepared to wow your guests with awesomeness!
NOTE: You can make this treat with your own homemade cheesecake recipe, but really, who has time for that?
So I realize this was supposed to be more of a rambling, but I remembered the recipe and I thought "Hey, everyone likes dessert. Maybe I should do this one first..."
