So believe it or not, I am finally starting this blog. The majority of postings will manage to be about the food I cook and random things that pop into my head. Today is the latter of the two.

I find myself laying around doing absolutely nothing productive and asked myself "what should I do to help pass the time this summer?" I came up with this. Many of my friends have told me this should have been started awhile ago.

I will tell you this: my recipes are based on my budget as a broke graduate student (which, oddly enough, the blogspot ID was already taken, so here is your plug brokegradstudent.blogspot.com).

So.... yeah. OH! I made these for a work function a couple weeks ago:


Oreo Cheesecake Cupcakes
Serves 12

Ingredients:
1 box No Bake Cheesecake Mix (ironically the Kroger brand comes out tasting best)
Milk
One package of Oreos
Cupcake holders

Instructions:
1. Prepare No Bake Cheesecake Mix per instructions on box (all you will need is the milk and the mix)
2. Place cupcake holders into your cupcake tray.
3. Place 1 (one) Oreo at the bottom of each cup.
     **Bonus: You don't have to do this but I also crush up more Oreos and put them around the Oreo so there is more of a crust**
4. Crush up 4-5 Oreos and fold them into the cheesecake mix. Do not make the pieces super small or giant chunks, but a happy medium.
5. Fill cupcake tins. There will be enough cheesecake mix for exactly 12 cupcakes.
6. Crush more Oreos and put them on top.
7. Stick the tray in the fridge for 4-24 hours and serve cold.

I never make just one batch and my double batch went pretty quick at work, so be prepared to wow your guests with awesomeness!

NOTE: You can make this treat with your own homemade cheesecake recipe, but really, who has time for that?

So I realize this was supposed to be more of a rambling, but I remembered the recipe and I thought "Hey, everyone likes dessert. Maybe I should do this one first..."
